Beet Croppler is a non-hostile critter with 10 health. It can appear in most underground and inland areas, but it does not spawn on the surface, in the Sun Arena, or in the Moon Arena.

Because it is not hostile, it functions like other ambient wildlife rather than an enemy. Its main relevance is simply being part of the world’s creature variety.
